eat your greens!

did you know you can eat beet greens?

Beet greens are packed with high amounts of vitamins and nutrients, including iron, calcium, magnesium and zinc as well as protein and fiber.

Beet greens also help fight inflammation, improve digestive health, support brain health and contain anti-cancer properties.

Just like other leafy greens, they are loaded with folate, the natural form of folic acid. Folate is incredibly important in pregnancy to help avoid birth defects like neural tube defects, and many women don't get enough.

convinced not to throw them out, but not sure how to use them?

I’m making a beet greens pesto tonight with lots of garlic, toasted walnuts, olive oil and some parsley!

3 cups beet tops (stems removed)

1/2 cup herbs

1/3 cup toasted walnuts

3 cloves of garlic, roughly chopped

1/4 cup parmesan

1/2 teaspoon black pepper

1/2 unrefined salt

1/4 cup olive oil

Place all ingredients except the oil in a blender or food processor; pulse until well chopped; slowly add oil until the mixture is well blended. Store in the fridge for up to 3 weeks.

You can also sauté like any of your other favourite greens, add it to soups or stews, or toss in a salad.
